Blueberry Swirl Breakfast Smoothie
Swirled to perfection. A delicious breakfast smoothie full of fruits, oats, almond butter, naturally sweetened with banana and made extra thick with dairy-free yoghurt. Swirl your glass with a homemade blueberry compote for the best experience. This smoothie is also a great source of fibre and vitamin C as it's boosted with an UNROOTED Good Fibre Baobab Fruit Powder sachet. Perfect for a tasty high fibre breakfast or snack.
Serves: 1 big or 2 smaller smoothies
Time: 5 minutes prep + 10 minutes cooking
Fibre content: ~16g in 1 big smoothie
Ingredients:
For the blueberry compote:
- 160g blueberries, fresh or frozen
- ½ lemon, juiced
For the smoothie:
- 1 x UNROOTED Good Fibre Baobab Fruit Sachet
- 1 banana, frozen in chunks
- 80g blueberries, frozen or fresh
- 1 tbsp smooth almond butter
- 1 tbsp chia seeds
- 25g oats
- 180-250ml plant-based milk e.g. soya or oat
Method:
1. Start by making the compote. Add the berries and lemon juice to a saucepan and allow to bubble away over a medium heat for 8-10 minutes, until glossy and juicy. Allow to cool in a bowl before using. You can keep this in the fridge in a sealed container for up to 1 week.
2. For the smoothie, add all of the ingredients to a blender and process until smooth.
3. Spoon some of the blueberry compote into 1-2 glasses and pour in the smoothie.
4. Top with some fresh blueberries and a few oats, if you like. Enjoy straight away.
