Creamy Coconut Strawberry Chia Pots
Thick and creamy coconut yoghurt chia pudding base served with fresh strawberries, strawberry jam and extra coconut on top. These fibre and protein-loaded chia pots have the UNROOTED baobab fruit powder sachets stirred in for added fibre and gut-health benefits.

Time: 5 minutes prep + refrigeration
Ingredients:
For the chia pudding:

1 x UNROOTED Good Fibre Baobab Fruit Sachet
- 120g thick coconut yoghurt
- 4 tbsp chia seeds
- 360ml dairy-free milk e.g. coconut
- 1-2 tbsp maple syrup, optional
- ½ tsp vanilla extract
To serve:
- 2-4 tbsp strawberry compote or jam
- 2-4 tbsp coconut yoghurt
- 2 tbsp coconut flakes
Method:
1. Add all of the chia pudding ingredients to a bowl and whisk well. Allow to sit for 30 minutes and then whisk again until creamy.
2. Cover and keep in a sealed container in the fridge for 4-6 hours or overnight, until thickened.
3. Give it a stir in the morning (add a splash more milk, if needed) and then layer up into jars with some strawberry compote or jam at the bottom and then finish off with some more yoghurt, fresh strawberries and coconut flakes.
4. Enjoy straight away or keep in a sealed container in the fridge for 2-3 days.
