High Fibre Bircher Muesli Bowls

A classic reinvented. Made with UNROOTED Baobab Fruit Powder sachet for lots of added gut-healthy fibre, along with grated apple, seeds, coconut yoghurt and oats. Serve these creamy oat bowls with some fresh berries and almond butter for a delicious make ahead breakfast that will keep you full all morning. 

Serves: 2 bowls

Time: 10 minutes + overnight

 Fibre content: ~13g per bowl

 

Ingredients:

For the Bircher Muesli:

  • 1 x UNROOTED Good Fibre Baobab Fruit Sachet
  • 100g rolled oats
  • 4 tbsp mixed seeds
  • 1 apple, grated (skin on)
  • 200g thick dairy-free yoghurt e.g. coconut
  • 240ml plant-based milk
  • ½ lemon, juiced
  • ½ tsp vanilla extract
  • A pinch of salt
  • 2 tbsp maple syrup or honey, optional

 

For the Toppings:

  • Extra dairy-free yogurt
  • Fresh berries
  • Almond butter

 

Method:

1. Add all of the muesli ingredients to a bowl and mix well until creamy. Cover and leave overnight in the fridge to thicken.

2. Spoon into bowls and top with more yoghurt, some berries and almond butter.

3. Enjoy straight away or keep in the sealed container in the fridge for 2-3 days.
