No-Bake High Fibre Granola Bars
Thick, chewy and crunchy. Fully loaded granola bars made with nuts, seeds, dried fruits and lots of fibre thanks to the UNROOTED Baobab Fruit Powder sachet that's naturally high in fibre and vitamin C. These oaty bars require no baking and are ready in 20 minutes plus chilling time – they are the perfect snack or after dinner dessert dipped in chocolate and flaky salt.

Ingredients:
- 1 x UNROOTED Good Fibre Baobab Fruit Sachet
- 100g medjool dates, pitted weight
- 100g dried apricots (unsulphered)
- 70g dried mango
- 4 tbsp (60ml) maple syrup
- 4 tbsp (60g) runny smooth almond butter
- 100g + 1 tsp coconut oil, melted
- 1 tsp vanilla extract
- 200g oats
- 120g mixed nuts e.g. walnuts, cashews and almonds, chopped
- 60g mixed seeds e.g. hemp, sunflower, whole flaxseed and pumpkin seed
- A pinch of salt
- 60g dark chocolate, chopped small
Method:
1. Line a 20-cm/8-inch square tin with parchment paper.
2. Add the dates, apricots and mango to a bowl and submerge in hot water. Leave them for 5 minutes to soften and then drain.
3. Add the mixed fruits, maple syrup, almond butter, 100g melted coconut oil and vanilla to a food processor and pulse to reach a thick smooth paste.
4. Into a large bowl, add the oats, UNROOTED baobab fruit sachet, chopped nuts, seeds and a pinch of salt and stir well.
5. Add in the fruity paste and stir well to make a chunky, sticky mix. Transfer to the tin and press down to make a compact base.
6. Place in the fridge for 2-3 hours, or until solid.
7. Add the chocolate and 1 tsp coconut oil to a heatproof bowl and warm over a pan of simmering water until melted.
8. Remove the bars from the tin, and slice into 10 bars. Dip each bar into the chocolate (just the end) and allow the excess to drip off.
9. Place on a parchment lined tray and sprinkle with flaky salt (if you like). Pop back in the fridge for 10 minutes to set.
10. Enjoy straight away or keep in the fridge in a sealed container for up to 1 week or 1 month in the freezer. Allow to defrost before eating.
